Lazy Mom Desserts

Boy have I got some great dessert recipes for you!!! They were submitted by a dear friend who isn't a lazymom yet... for now she falls into the DINK category: Dual Income, No Kids. But she will most definitely be a lazymom someday!!

Here's what she had to say....

Both of these cakes are equally scrumptious! This is a recipe my mom makes all the time and it has become one of our favorites. It can be made into a 13 x 9 cake, a bundt cake, or cupcakes even. I always keep the ingredients in the house so if I need a quick dessert I can whip it up. It couldn’t be easier and to make things even better it’s very low in calories. It has no eggs or oil!!!

Orange Cake

1 French Vanilla Cake Mix
1 can of diet orange soda (any brand)
1 - 8 ounce tub of Cool Whip

Pour soda in bowl. Pour cake mix over soda (it will foam up a little bit). Mix well. Bake according to box instructions for temperature and time. Allow to cool completely. Frost with Cool Whip. Store in refrigerator.


Lemon Cake
1 Lemon Cake Mix
1 can of diet 7Up soda (diet Sierra Mist or diet Sprite work just fine)
1 - 8 ounce tub of Cool Whip

Pour soda in bowl. Pour cake mix over soda (it will foam up a little bit). Mix well. Bake according to box instructions for temperature and time. Allow to cool completely. Frost with Cool Whip. Store in refrigerator.

So go forth and make cake everyone! And report back how easy and wonderful it was!

Baked Ranch Chicken {A Lazy Mom Recipe}

I'm so excited! We've got ANOTHER great lazymom recipe for you lazy's out there!

Seeing as we only have like 3 readers, that means there should only be ONE more left to go! But that's beside the point. Let's get on to our great recipe submitted by lazymom Jessica. Here's what she had to say about it...

This is one of the moistest chicken breast ever....and my husbands favorite..........

Baked Ranch Chicken

4-5 skinless boneless chicken breasts
1/2 cup butter (melted)
1 pkg of hidden valley ranch dressing mix
1 Cup Italian seasoned bread crumbs
1/2 cup freshly grated Parmesan cheese

mix bread crumbs, dressing mix and Parmesan cheese in bowl.....dip chicken in melted butter, and then bread crumb mix and place in 9x13 inch pan. Bake at 375 degrees for 30-40 min depending on the size of your breasts...(hahaha) chicken breast I mean..... Serve with anything you feel goes with chicken.

YUMMY! Thanks Jessica! This is a recipe I used to make quite a bit and had gotten away from it. I'm totally reintroducing this to my dinner repertoire. Hahaha! Okay, that cracked me up. Like I have a repertoire of dinners... I'm a lazy mom, remember?

We got a fresh one!

Whoo-hoooooo! We got our first official recipe from the streets! And these streets are in Wisconsin land! Thank you to Amy for being our first ever recipe submitter thingy!! You've won a years supply worth of love from the Lazy Moms!!!! Now aren't you so glad you did that?

Amy's totally awesome crock pot recipe.....

2lbs beef tips
1 can cream of chicken soup
1 container sour cream
1 pkg of lipton onion soup

Put beef in crock pot.
In a separate bowl, mix soup, sour cream, and onion soup mix together.
Pour over beef.
Cook on low 6-8 hours

Serve over noodles.

In a Pinch Fiesta Corn!

Last night I needed to make dinner quick with not much on hand.... so I made some rice and then made up this recipe to go with it. It was SUPER yummy.

So let me see if I can remember the rules for a LM recipe:

1. Is it so easy a lazy mom can do it? YEP!

2. Does it have less than 5 ingredients? oops... I thought it was 5 ingredients or less...well, shoot... except for the spice it has less than 5 ingredients!.... guess I was too lazy to read the fine print!

3. Is it family friendly? well that also depends... my girl likes spicy... but hey, this is something you can do any way you want!

heat oil in a wok or frying pan. dice up some onion and bell pepper. throw it in and saute. Add a can of corn... and a can of kidney beans, rinsed.... then I used quite a bit of "McCormick's Spicy Season All" and some red pepper flakes for extra heat. You could season it with whatever your family likes, though. Heat through and serve (we liked it over rice with a salad as a main meal, but it would be a good side dish too)

That's it. It was soooooo yummy I couldn't stop eating it.

I'm finding we really like that "Spicy Season All" stuff a lot... hubby likes it on chicken so I do that a lot. That and lemon pepper. I have a great hubby for being a LM cook - he likes me to make the same thing over and over and OVER! if it has corn, potatoes and a salad with it... and chicken breasts he's happy! hahahahaha!

I wish I had some cool photos of the Fiesta Corn.... but I wasn't thinking about posting the recipe at the time I made it and well.... there weren't any leftovers! oops!

Smoothies Anyone?

We've had an overwhelming response to our awesome new "Cooking the Lazy Mom Way" idea. Okay, not really. In fact, we've had zero responses, but that's okay. I've cried over it and asked God, "why me?" and then I was fine. So no worries!

So to entice you to send in your lazy mom recipes, I've decided to throw another one of my personal favorites out there for you to see. And this one I've actually DONE before, so that's a plus. So first let's see if it meets all of our lazy mom requirements for being submitted:

1. Is it so easy a lazy mom can do it? You bet your sweet bippers it is!

2. Does it have less than five ingredients? Sure 'nough!

3. Is it family friendly? Well if this picture doesn't tell you it is then I might as well call it quits.


So off we go now!

First you get your blender out. Mine happens to be caked with lots of goo and grime (like any good lazy moms would be) so just keep your eyes a little further up, k?

Get you one nice looking banana and throw it into the blender like so.

[A quick side note about bananas. Usually I keep a bag of bananas in my freezer for this VERY recipe, but for some reason SOMEONE

*cough* Lazy Dad *cough*

must have thrown them away! So whenever you have some bananas that are starting to go bad, just throw them in a Ziploc bag and chunk them in the freezer. That way you have NO excuse not to make this recipe.]

Next, take you some 'Great Value' blueberries (ya, we aren't food racist around here. Any ol' brand will do) and pour 'em in....

till right... about... there. Stop!


Now take you some frozen raspberries and blackberries and pour them in, too. These are ones that I had frozen from when I bought fresh ones a while back, but there is a whole mixed berry frozen pack that you can buy at the grocery store. Those grocery stores, they make it convenient to spend money, don't they?


Next grab the fourth and final ingredient, orange juice, and fill 'er up to right about there....

Then if you are a TRUE lazy mom you won't be able to find the little thing ma'bob that goes with your lid, so you have a lid with a whole in it. [can I get a witness out there?]



So you will have to do exactly what I did...


Ya, do that. Hold it down tight while you mix away until it's smooth. [You may have to add more orange juice to keep loosening it up until it's smooth.]
Then go get you a glass and fill it up to the brim!


Or in my case, half full.

Because I have three of these to fill as well...

[Notice the crock pot in the background? See that the little light is lit up? That's because I'm making this even as we speak - Seeeee? I really do cook the lazy mom way in real life and not just on blogger.]


Next, you'll need to do like I did and run out to your car and get that random extra Wendy's straw that they gave you that one time 2 years ago, and use it to slurp up your totally awesome smoothies!
Hey! I can't keep straws in the house because as soon as I buy a package they are GONE. G- O- N- E- Gone, people.


So now you absolutely MUST stop what you are doing RIGHT NOW and email us your lazy mom recipes! You must, must, must!


And now I MUST stop what I'm doing and go put on deodorant because I just realized I forgot to do that earlier. Niiiiice.
