A VERY Lazy Mom Dinner

Okay. I'll admit it. I served up a VERY lazy dinner for my kids last night. But before I admit what I did, I do want to inform you that I did cook healthy, well-balanced meals the four other nights of the week, so don't judge me from this one meal.

Hear me?  Don't. Judge.

Besides, here at I'm a Lazy Mom, we pride ourselves on being real moms with real schedules and we aren't afraid to confess our shortcomings

As I'm sure you've all forgotten (because I had) a long time ago we lazymoms instituted a new and exciting feature on this here blog. 

Whoa. 

Did you catch that?

My Texan talk just came out. 

I moved away from my homeland of Texas over 11 years ago and I've pretty much lost most of my accent, but every once in a while a nice little phrase will pop back out like a long lost friend.  Helloooo!

But anway, our feature on this here blog (said in my best Texas girl accent) was a little thing we liked to call "Cooking the Lazy Mom Way."  I know, I know.  The title is a work of art.  Along with all the other titles and names we have on this here blog. Because we are too lazy, er, I mean busy, to come up with cutsie clever names for this here blog.  [Alright, I'll stop with that.]

So that brings me to dinner last night.  I was being lazy, uh, busy, rather and noticed that it was already 6:00 and I hadn't started any dinner.  I looked at three hungry faces and knew in an instant (because I'm that good) that I had about 5 minutes to get something on the table before major hunger meltdowns occured.

I took a quick 30 second gander of the pantry and refrigerator.  And then inspiration hit.  BAM!  Just like that. 

Frito Pies. (A staple at any Texas high school football game's concession stand.)

I just happened to have everything I needed for this very complicated dinner.  Let me show you....


So I thought I'd share my last minute dinner with you because, after all, it does meet all the requirements of cooking the lazy mom way.

So basically, here's what you do.... and pay close attention because this is VERY complicated and I'd hate for you to mess this up.

Step 1: Heat up the chili in the microwave.
Step 2: While the chili is heating up, pour the fritos into a bowl.
Step 3: Remove chili from microwave.
Step 4: Spoon chili over fritos.
Step 5: Sprinkle shredded cheese over the chili and fritos.
Step 6: Eat it.

Phew.  I hope you caught all of that.  I told you it was complicated.

The end result will look like this: (yes, I know that the picture is horrible and is sideways, but this is cooking the lazy mom way, not Pioneer Woman Cooks, mkay?)

  1. You make me laugh when I read you texan lingo :) I lived in Texas for a year, and never got sick of hearing them talk. We used to have frito pie at the internship I went to, and it was sooo yummy! Thanks for reminding me of this, I will have to pick up some cans of chili and fritos, I usually ALWAYS have shredded cheese on hand because that is a staple here like milk and butter.

  2. To make it even more of a lazy mom thing don't put it on a plate! Just put the chili and the cheese in the bag with the chips! Less likely to have a mess and you don't have to do dishes!! (The kids think that they are getting a real "treat" too!)

  5. Oh, you ARE a Texas girl if you're making Frito Pie! And so am I. :)

    When I made it for my husband the first time (he's from Alabama), he said, "Oh that's Frito Chili Pie!" Um, whatever. They don't even have it at high school football games in Alabama. Can you believe that? That's like not having giant pickles or Blow Pops.
