Lazy Chocolate Lava Cake

Uh, did you check out the title of this post?

Because I do believe I see the words, lazy... chocolate... lava (which means gooey yumness in my mind)... and cake all put together.

Taking those words into consideration, this might possibly be the most exciting thing I've ever posted about ever. 

In fact, we may need a moment of silence after reading those four words together.

Everyone?  Bow your heads please.

Okay.  Thank you.  Did anyone else tear up?  Because I think I did.

So lazy mom Jen sent in this most wonderful moment-of-silence recipe to us here at I'm a Lazy Mom and I'd be jiggered if I didn't share it with all of you other wonderful lazy moms. 

Here's what Jen had to say about her glorious moment-of-silence recipe...

I have a great recipe the kids love...and my husband loves it even more because even he can handle this one! I know it's 6 ingredients...but is the pinch of salt really an ingredient??
No, Jen.  In my world a pinch of salt does NOT count as an ingredient.  I'm totally with you in this.  Especially seeing that I will now have an excuse to make this cake and eat it too.  You did the right thing and we are ALL proud of you for it. 

Albeit our thighs are not proud of you, but our hearts are...

Lazy Chocolate Lava Cake

6 Tablespoons butter
1/2 c dark chocolate baking chips
2 eggs
3 Tablespoons Sugar
1 1/2 teaspoons flour
pinch of salt

In small saucepan over low heat, melt together butter and chocolate, stirring intermittently. In small bowl, mix together remaining ingredients. When butter and chocolate are all melted, stir into bowl of egg/sugar/flour/salt.

Pour into two small ramekins and bake 8 to 10 minutes. Cake will be done when edges are set. The middle of the cake will not be set! Let cool a few minutes and enjoy!

Optional: Try different toppings like strawberries or raspberries rolled in sugar.


I think I just heard angels singing, but I can't be sure.  Maybe that was my stomach rumbling, or maybe it was my thighs groaning.  It's hard to decipher these things.

Anyway, go forth and make cake.  All of you.  Then tell me how wonderful Jen is for sending us this lazy recipe.

  1. That's a cool recipe, but I've got one that's even easier, and no dirtying up pans either. A bit cheaper and almost as easy as those Betty Crocker Warm Delights!!

    I use one of those bigger 16oz. Corningware ramekins and it turns out perfect.

    2T. oil
    2T. water
    pinch of salt
    1 teaspoon vanilla
    4T. flour
    3T. sugar
    2T. cocoa

    Mix wet ingredients, then stir dry ingredients in until just mixed. Microwave for 75 seconds.

    Ooey, gooey goodness!! Only a few spoons and the ramekin.

  3. This cracked me up because you said you heard angels "signing" instead of "singing." I'm picturing angels doing sign language, and it's making me smile. :)
