So not too long ago, I posted about a lazy way to make your own pudding pops.
Which then led to this post about an even LAZIER way to make pudding pops.
To which led to THIS post about if the lazier way even works.
And if you thought that THREE posts was sufficient enough to discuss pudding on I'm a Lazy Mom, then you were just plain wrong.
This post will make four.

Anyway, in that second post about pudding pops a fellow lazy mom who lives in England (but hails from the U.S.) was in great distress because they do not sell American style pudding in England.
This was a very serious thing we needed to address on this here blog.
I mean this poor lazy mom is WITHOUT American pudding way across the pond and we simply must, I mean, MUST help her.
There were a few suggestions of what she should do in the comments of that second pudding pop post, but it basically boiled down to her needing to find a lazy recipe of how to make her own American pudding.

My long time BFF and fellow Lazy Mom, Chana, took it upon herself to help this mom out who was in emotional and mental turmoil over not having American pudding.
Well, at least we perceived her to be in emotional and mental turmoil.
She may not actually be.
Sometimes we exaggerate around here.
But not often.
*Ahem*
So Lazy Mom Chana, which by the way currently lives in China of all places, could totally relate to this lazy mom's predicament in England. Because, well, she lives in CHINA, did you catch that?
[Gosh, aren't we all International and stuff on I'm a Lazy Mom?! We even had an Australian Lazy Mom post here on Monday. Any other continents or countries out there want to give us a shout out?]
So Chana took it upon herself to find some recipes for this fellow lazy mom. And here is what she had to say about them...
I did some research about making your own pudding.... the problem is, you can make a mix, but you still have to cook the pudding. I can't find a mix you don't have to cook. Still, if you make up a batch of the mix ahead of time, you cut the work down to just adding milk and heating.... so that's kind of lazy. Then you can use the pudding for pies, pops, whatever.
So, here are some of the better recipes I found (I'm especially impressed with the butterscotch pudding recipe!)
Vanilla Pudding Mix
3 cups nonfat dry milk
4 cups sugar
1/2 tsp. nutmeg
1 tsp. salt
3 cups cornstarch
1/2 tsp. vanilla extract
Mix all except the vanilla, and store in an airtight container. To prepare, mix 1/2 cup of mix to 2 cups milk. Heat and stir constantly while boiling. Cool, then add 1/2 tsp. vanilla extract.
Chocolate Pudding Mix
2 1/2 cups nonfat dry milk
5 cups sugar
3 cups cornstarch
1 tsp. salt
2 1/2 cups unsweetened cocoa
Mix and store in airtight container. To prepare, add 2/3 cup mix to 2 cups milk. Heat and stir constantly while boiling. Cool, then serve.
Coconut Cream Pudding Mix
3 cups nonfat dry milk
4 cups sugar
1 tsp. salt
3 cups cornstarch
1 1/2 cups shredded unsweetened coconut
1 tsp. coconut extract
Mix the extract and the shredded coconut in a small bowl until the extract is absorbed. Add the coconut to the other ingredients and store in airtight container. To prepare, add 2/3 cup mix to 2 cups milk. Heat and stir constantly while boiling. Cool, then serve.
Butterscotch Pudding Mix
2 cups nonfat dry milk
5 cups brown sugar, packed
1 tsp. salt
3 cups cornstarch
Mix and store in airtight container. To prepare, add 1/2 cup mix to 2 cups milk. Heat and stir constantly while boiling. Cool, then serve.
So there you have it Debbie (our emotionally and mentally distressed lazy mom in England - who now shouldn't be emotionally and mentally distressed at all!) Let us know if you use them.

Stacey, you're the best! (And you really make me laugh). And Chana, thank you SO much for hunting up those recipes! Actually, I recently got some pudding mixes in a really lazy way, sort of. We spent the 4th of July with some military friends (3 hours drive away), and they GAVE me some pudding mixes (they're lucky enough to have American food on base). So first I'll try the pudding pops with one of those, but I'll soon run out, and then I'm going to try ALL those recipes because I love pudding! And pudding pops! Oh, and my kids love pudding too (they've never had pudding pops). Okay, so don't worry about me...I'm no longer emotionally and mentally distressed over lack of pudding thanks to you lovely, lazy moms!
