Lazy Cranberry Chicken

You lazy people are going to love me again today. Just LOVE me I tell you!

A couple of years ago (yes I said years) I ate the most. delicious. chicken. ever. It seriously was as if it came straight from heaven. In fact, I'm almost certain it was anointed.

When I left the house where I ate this divine chicken I begged the hostess for the recipe. Which she promptly gave me. And I promptly lost.

I've got skills people, serious skills.

Several times after this sad event (of losing the recipe) I asked the hostess for it again. And several times she rattled it off for me as if I would remember it like she did. Bless her heart.

Or maybe it's, bless my heart?

I think it's bless BOTH our hearts.

Anyway, this went on for years (yes I said years). And for years (yes I said years) I went on in life without this anointed chicken dish passing through my lips. It was some very sad years in my life (yes I said years).

To make a long story short (is it too late?) I actually had the presence of mind a few weeks ago to ask this wonderful hostess for the recipe again, but this time I whipped out my cell phone.  I just whipped it plumb out. Just like that *snap*. That's how good I am.  And I pulled up my notepad thingy and typed in the recipe as she gave it to me for what was probably the hundredth time. (This should testify to this lady's patience, that's for sure. Wait. So maybe it IS just bless my heart and not hers).

This time I was walking away with the recipe IN HAND.

It was a glorious day.

I'm pretty sure I heard angels singing. Or else it was me humming from happiness. I can't be sure, they sound so much alike.

*ahem*

So. Yesterday I made this dish. And people, it's wonderful, just wonderful I tell you.

AND (get ready for it) IT'S A LAZY MOM RECIPE.

Could. You. Die?

AND (get ready for it) IT'S A CROCKPOT RECIPE.

Could. You. Double. Die?

Oh I think you could. And you shall (but not for real, mkay?)

So I'm going to give you this wonderful chicken recipe. But first let me tell you two things. (You know, because I haven't told you enough things about this recipe yet.)

  1. The ingredients in this recipe sound VERY strange.  I would never, I repeat NEVER have put these ingredients on chicken and cooked it.  Ever.  Never ever, you hear me?  But trust me on this one, my lazy people. It's good in the end.  It's allllll good.
  2. Do NOT laugh when you realize that I couldn't remember the three ingredients for this chicken dish.  That I was told dozens of times.  I have mommy brains, on top of a bad memory, on top of three kids constantly asking me for something all the time, on top of, wait, what was I saying? I can't remember. Oh never mind.
Here it is... the moment we've all been waiting for... some of us (*cough* me *cough*) longer than others... (did I mention it was years?)

Lazy Cranberry Chicken

4-5 chicken breasts
1 8oz bottle of french dressing
1 packet of dry onion soup mix
1 16oz can of whole cranberries

Place your breasts (the chicken's, not yours) in a crock pot.  I slap mine in there frozen (the chicken's, not mine), but if you have some time (and want this dish to be even better) you can brown your breasts (the chicken's, not yours) on both sides in a pan before putting them in the crock pot.  Which is something I've NEVER done, but I do recommend it for those of you who aren't as pathetic as I am.  It adds flavor.  Or something like that.

Next, pour in the whole bottle of dressing, toss in the soup mix and dump in the cranberries.  (Those are all very technical cooking terms in case you were wondering.)

Cook on low for 6-8 hours or on high for 3-4 hours or until your breasts are done (the chicken's, not yours).

Serve over a bed of rice, noodles, or just throw it down on a plate like I did.


No matter how you serve it, just eat it.

And then love me.

Forever.

Because you will.

At least if you have my taste buds.

If not, I don't got nothing for ya.

Oh! And an added bonus to this recipe is the fact that you probably have some cranberries sitting in your fridge leftover from Thanksgiving last week, now don'tcha?

So see?  This is practically a Thanksgiving leftovers recipe.  Because you could totally sub turkey for the chicken!  And the hostess that gave me this recipe, says this sauce also ROCKS on pork chops.  Awwwww, yeah.

Well, okay, she didn't say rocks. But I feel certain she meant that.

    I haven't tried it with french dressing, but I have made it with a mild BBQ sauce and can I say YUM!!

    Hmmm....I think I'll make this on Sunday now!

  3. This sounds great! The ingredients do sound a bit odd but I trust you, I trust you! Hubs doesn't like onions, at. all. I wonder what I can do about that? Maybe I can just remove the bits of onion from the soup mix? Yeah, I'd go to that length. I guess.

  6. This is by far the easiest crock pot recipe I've ever seen. I have a couple crock pot cook books but they must think I'm some kinda Martha Stewart that has the knack for that kind of thing....or the pantry...some of those ingredients they call for are W-E-I-R-D. or maybe i just need a better crock pot cook book. LOL Thank's for the laugh.

  8. I love easy crockpot recipes! I've searched online and think I've found a store in England that might have dry onion soup mix. If they don't, I'm sunk. They don't have it at our regular supermarket. And the French dressing here doesn't look the same, but I'll try it!

  10. Okay, I have everything on hand but left over cranberries, so I'll have to get some and try this recipe out. It sounds yummy to me.
    French dressing helps rock alot of dishes up, for example.
    Cook rice for how ever many people you're going to have (I usually make enough for 6), then put the rice in the bottom of a greased cake pan. Mix in one can of drained sauerkraut, and one 8-16 oz bottle of French dressing, the moister you want this the more dressing you use. I usually use a 16oz French Dressing. Place on top of this cubed cooked no bone meat you have left over (chicken, turkey, ham and lamb taste really good in this, but sliced up cooked link type sausages taste okay too), then top the whole thing with Swiss Cheese. Put into a 350 degree oven and cook until warmed through and the cheese on top is starting to brown. It's a tasty Sweet Kraut Casserole.

  11. You're right this is a lazy mom's dream recipe! I can never remember to load the crock pot so I do it in the pressure cooker and only takes 30 mins from frozen. I've left out the soup mix and it's still delicious.

  15. I have made a roast this way....with just the cranberry sauce and onion soup mix, and it was excellent. We had it for a Christmas Eve dinner, in fact. I love being lazy, especially on holidays! :-)

  16. Ok, so I made this with French dressing, and mine looked way different than your pic. Oranger (yes that's a word) and thicker. So I'm thinking maybe you meant Italian dressing? Or maybe the one in the picture was made with Italian? I think I'll try that next time because this recipe was really good and sinfully easy, but it was a little too sweet for my hubby's oh so discerning taste. And we all know that's important since it's the dad's responsibility to finish off any and all leftovers.
