How about a new Lazy Mom DESSERT Recipe to put in your Lazy Mom cooking repertoire?
How about we all sit around over a pan of these and talk about how jiggly our thighs are and sing kumbaya together?
No?
Well okay, I thought maybe if I threw that one in there you'd all want to do that with me, but whatever.
Anyway, Lazy Mom Beth who has sent in past Lazy Mom Recipes for us to enjoy has done it again! Her latest submission makes me want to kiss her and then smack her all at the same time.
A kiss for the easy dessert recipe.
A smack for the damage it will do to my thighs.
But I'm sure you all knew that already.
Lazy Cake Cookies:
1 box yellow or white cake mix
2 eggs beaten
5 T melted butter
2 C M&M's or mini chocolate chips
Mix together, put in a greased 9x13 pan and bake at 350 for 20 min!
After looking at that picture I just have two words for you....
Glory.
Hallelujah.
I think I'll be making these soon. BUT only if the family is here to help me eat them or I may eat the whole thing by myself. And that would just be terrible for that jiggly thigh disease I have.
What? It's a real disease. It's just never been labeled till now. As in right now this minute.
I'm sure the medical community will be contacting me soon to learn more about this atrocious disease and how it affects millions every day.
I'm sure they will give me awards and accolades over it.
I'm sure they will make me the case study once they see these bad boys I sport around.
Aren't you so glad you read this blog? I mean where else would you hear so much talk about jiggly thighs?

DeleteTried it and didn't turn out like the picture. Was very much like a thick cookie dough consistency, but not very spreadable.

ReplyDeleteI just made this for Mother's day dessert. I used about 1/2 cup of mini m&ms, 1 cup of mini chocolate chips and then about a 1/2 of cup of heath toffee chips! I tasted the batter and it was amazing! I just took it out of the oven and it looks great! Going to serve with vanilla ice cream!! I love Pinterest for helping me find all of these wonderful recipes!!

ReplyDeleteMade this on Fri afternoon and its Sunday Morning and there is one piece left....really easy and good...was afraid it would taste like cake but it tastes just like those expensive choclate chip cookie cakes you buy in the Malls. I used two cup of choclate chips....definetly will make it again...espeacially around the holidays :)

ReplyDeleteI found with a Duncan Hines cake mix, that there wasn't enough to cover a 9x13 pan, so I used a 9x9. Did anyone else have this problem?
ReplyDeleteyes me too. i did a 9x9 clear glass, 1 cup of reg size choc and white choc chips and i pammed the pan in fear of a sticky mess. it came out of pan with a spatula just fine and still with a cookie bottom. took 35-40 minutes. i turned oven off at that point and let it cool in the oven till it was cookie browned color. middle hard to cook but if the pan was bigger i would have less "edge" pieces. I cut it like brownies and it is about an inch or 1 1/4 inch thick. kids loved it. thank you for idea.
Deletenext i will try it in my 9x9 silicone pan...i think that might cook more even in the middle, faster.
I think I will have to use a larger pan next time or bake much longer than 20 minutes. I had to use an 8x11.5 glass pan - all my others were too large - and it was a great bush mess! I did increase the time by ten minutes but it still wasn't cooked all the way through. I might also decrease the chocolate chips, as the result was very melty. It tasted great, though! Definitely a repeater with a few tweaks...

I will have to increase the baking time or invest in a larger pan, because the resulting gooey mess tasted so good, my son begged me not to give up on this recipe! I might also decrease the chips a bit...

ReplyDeleteHello!! I'm not a Mom but I do cook for my parents and myself!! I found this site through pinterest and love it!! Tonight I tried this recipe...I only had a Pillsbury "Sugar Free" yellow cake mix on hand, which worked perfectly(diabetics in the house)!! I added chocolate chips, walnut pieces and some coconut to it and baked it about 27 mins. Fearing it may stick, I did lightly coat the glass dish with some Crisco...it was YUMMY!! Looking forward to trying more recipes!! Thank you. :)

DeleteI just made this with a Pillsbury Yellow cake mix with pudding in the mix and after i added the eggs and butter and stirred it was full of clumps that would not stir out. I had to add two tablespoons of water to make not dry and lumpy. It was delicious!

I had to add 2 TBS of water to get it to all combine. I made it in a 9X9 wilton heart pan and it was thick and delicious. My daughter loved that the M & M's turned the cookie all rainbow colored. ReplyDeleteI made these last night...turned out perfect!! Was worried it was too dry but I kept mixing and it turned out fine. I used 1 cup choco-chips and 1 cup m&ms. When spreading it in the pan...I wet my hands to spread it out in a 9x13 pan...had some unexpected friends show up (they said it was because they smelled the yummy cookies) and it was no fuss, no muss. DeleteI baked them for 22 minutes and they looked done on the top and bottom, and nothing but chocolate came off on my toothpick. After they cooled 20 minutes, I cut into them and it seemed like they weren't done. Of course it was too late by that time to put them back in to "finish" cooking. I DID use regular size chocolate chips by mistake, which seemed like a lot, so maybe that made them more mushy. Anyone else have this problem? I was expecting a drier, fluffier cake like cookie and got more of a greasy brownie. I will try again with mini chocolate chips or M&M's.

DeleteYummiest ever!! Thanks for posting! I made these tonight and the pan is almost gone. (having a teenage son and tween daughter helps my jiggly thigh issue just a tad. But no more than a tad! ;) I will try a smaller pan next time, only because mine fell a little flat. I had to bake about 10 minutes longer because I pulled them and the middle wasn't quite done. Other than that, I will be trying other cake favors and candy combos. Can't wait!!

ReplyDelete1st) The batter was much lumpier than in the photo. I did use reg size chips - because I forgot to pay attention to the details before I went to the store.
2nd) The batter was still somewhat gooey at 20 minutes. I popped it in the oven for a few more minutes, still a little gooey - don't know if "moist" yellow cake was the reason for this... or if my mom's oven is simply not heating up properly.
Tasted good (I know I should have baked it a little more, to ensure the eggs were cooked though)... Tasted somewhere between cookie and brownie, I think.

I found this recipe thanks to pinterest and I made it tonight...it turned out awesome! I also was able to make it milk free with the right brands & using margarine instead of butter...I have a daughter who is allergic to milk and this recipe worked so well for a treat that she could enjoy too! Thanks for sharing.

ReplyDeleteQuite delicious! Treat them like brownies when they come out of the oven. They need to cool before slicing. They are done when the top is a nice light brown. 20 minutes wasn't long enough in miy oven.

ReplyDeleteI made this recipie using gluten free cake mix several times. The Betty Crocker or Wegman's worked best to make enough. Even the in-laws, who didn't know it was gluten free, loved it!!

DeleteI made this using Best Choice Butter Yellow mix and about 1 2/3 cups big chocolate chips and 1/3 slivered almonds. Baked about 26 mins in my 9X13 pan. I spread it using a white plastic mixing spoon, spreads pretty thin but covered the bottom and rose with cooking. THANKS! Very good.

ReplyDeleteI decided to try this tonight. PERFECT! I followed the recipe exactly as posted and used 2 cups mini m & ms. mixed some in with the batter and sprinkled some on top. I am not sure why anyone has had problems making this. Sure, it is sticky but just put a lil shortening on your fingers and it fits perfect in a 9 x 13 pan. Mine came out about 1/2 to 3/4 ' thick. I am definitely gonna try different variations with this,..thank you!

ReplyDeleteI made this with yellow cake mix and one cup chocolate chips and one cup peanut butter chips. It worked PERFECTLY. Yes, it's like thick cookie batter, but just use a spoon to press it down into the pan.

You know, I wonder if some of the people having trouble spreading the final mixture are using SOFTENED butter instead of MELTED? I know from some of my other baking adventures that the there's a BIG difference in the two as far as final consistency goes..

ReplyDeleteI actually just made these and put big spoonfuls of the dough into a sprayed muffin pan it filled all 12 perfectly! And they turned out amazing and best part was I didn't have to cut them! :) I used 1/2 cup mini semi sweet and 1/2 cup regular semi sweet. That is what was in my cupboard and my hubby loves butterscotch so I topped his off with them. He really enjoyed that! Thanks for sharing this recipe! So easy amd delicious!!!

DeleteI just made this for Thanksgiving. I was assigned the allergen free dessert so I used King Arthur GF yellow cake mix, Fleishman's unsalted margerine (dairy free) and Enjoy Life Chocolate Mega Chunks. It was very thick and sticky but with a silicone spatula I was able to spread it fine in a 8x11 pan and it cooked in about 25 minutes. They were a big hit and I will definitely be making them again! Thanks for sharing!

Doing yellow cake mix with walnuts and white cake mix with dried cherries, white chocolate chips! I'll let you know how they turn out! Thanks for the 'lazy' idea!
ReplyDeleteThese turned out great. Instead of the splash of water that some recommended, I put a splash of vanilla extract. Also, I only had reg. choc chips, so I used those. They needed about 25 min to finish, but they rose nicely and are, as mentioned above, like a "cookie brownie.". Yum!
ReplyDeleteI highly recommend using a white cake mix and 1 C butterscotch chips! Yum! (1 C was more than enough chips) Turned out like a "blondie" as opposed to a brownie. I didn't need a splash of water, but I did use the tip about pressing the dough in the pan with wet hands, and that was perfect. Definitely don't be shy with the spraying of the pan. Took about 25 minutes to cook in the middle. Kids loved them and so did I. Will try again.
ReplyDeleteMe again - I just made this recipe again, this time with a lemon cake mix. Chose not to put in any "add-ins" and they were so delicious! I found that mixing with a spatula/bowl-scraper helps to incorporate the mix better than a spoon. Watered my hands and pressed the dough into my 11x7 pan. Cooked in 20 mins this time. Slightly more cakey than my prior batch. All good!

ReplyDeleteMade this tonight. I used a Pilsbury Butter Cake Recipe w/pudding in the mix. I also used a 9x13 without any issues. I added 2 Tb of water per some suggestions as the mix was super thick. Wet hands worked like a charm to press out the dough. I would say it's a cross between cake & brownie. Yum.

Used a fudge cake mix..can never have to much chocolate:)) I live in Colorado so I added 2 TBL of flour, cut the butter to 4TBL's, added 3 TBL's water. Used Mandygirl238 idea and wetted my hands when spreading it in the 9x13 greased pan. They came out GREAT. They taste like brownies to us. Moist & chewy. I will never buy boxed brownie mix for my husband again. Had no trouble at all with putting this in a 9x13 pan. The brownies had a nice thickness to them. Am making a copy of the recipe to take to work tomorrow:)

I just took mine out of the oven and it looks divine...tastes great too :) It was rather dry mixing the ingredients together but I just added a bit more melted butter and it helped. As for spreading the mix in the pan, it was too sticky so I rubbed the leftover melted butter on my hands and that also helped spread it easier.

ReplyDeleteThe first time I tried this recipe it turned out a bit dry and crumbly. Still good though and my hubby ate the whole pan, he thought they were awesome. Today I took advice from here and used the 2 TBSP of water and a splash of vanilla and they turned out even better. Thank you for this recipe!
