Lazy Frozen Mocha Pie

You coffee lovers out there are going to LOVE me today, cause, uh, did you CATCH that title up there??

Lazy Frozen Mocha Pie.

Or I guess you coffee freaks could call it...

Easy Dreamy Bit of Heaven.

*shrug* Either one works.

Yes, I was inspired to lazify a frozen mocha pie recipe I recently stumbled upon on a blog called Handle the Heat.  

So how do you make it?  Here you go!

Lazy Frozen Mocha Pie

1 chocolate graham cracker pie crust (you could use Oreo if you can't find chocolate)
1 quart coffee ice cream
4 ounces semi-sweet chocolate chips
1/2 cup heavy cream
1 tablespoon unsalted butter

Take the ice cream out of the freezer and put in the refrigerator for 30 minutes to soften. Then put the pre-made pie crust in the freezer to chill a bit.  I like to call this the ol' switcheroo.  But you don't have to call it anything.  That's just what I do.  Make up random names for things.

While the "ol' switcheroo" is going on, place the cream in a saucepan on the stove and bring to a simmer. Once simmered, remove from heat and pour in the chocolate chips. Let stand for a few minutes or until the chocolate has melted.  Add the butter and stir the mixture together until smooth.  This is apparently called "ganache."  And that I didn't make up this time.  Let the ganache cool a bit while you work with the ice cream. 

After the ice cream has sat in the fridge for about 30 minutes, remove it from it's carton and place in a large mixing bowl. With a big spoon stir the ice cream so that it is spreadable. If the ice cream looks too melted, put it back in freezer until a little more solid.  You want it in a spreadable consistency. 

When the ice cream is spreadable, spread it into the chilled crust in an even layer. Pour the warm ganache over the ice cream and tilt pan to cover the top evenly. Transfer pie to a flat surface in the freezer and chill for at least 3 hours.

This is a great pie to make when coffee freak company comes over because it looks like you really worked hard on it.  And I won't be there to tell them you really didn't!
