Lazy Chocolate Caramel Cookies

My lazy people.

When I saw an email sitting in my inbox entitled Chocolate Caramel Cookies, I knew it could quite possibly be love at first sight for me.

And when I saw the picture attached to the email, it was.

I think my exact words were, "OH. MY. HEAVENLY. DAY."

And then I tried to grab a cookie off my computer screen.

And then I cried when I couldn't.

So I just couldn't let the weekend go by without posting this recipe that Emily sent in to me and declared "delicious and SO easy!"  It just wouldn't be fair to all you precious lazy moms out there.

Plus it goes perfectly with the topic of my radio show yesterday, Back to School Tips.

How? You ask?

Because this recipe is so easy even a lazy mom can do it, therefore she can make a batch of these up this weekend to put in her little whippersnapper's lunches next week.

If she doesn't eat the whole batch herself first.

Consider that last statement a disclosure to this recipe.

Lazy Chocolate Caramel Cookies

1 pkg. (18 1/4oz.) devil's food cake mix*
1/4 cup water
1 egg
3 Tbsp. canola or vegetable oil
18-24 Rolo candies

Combine cake mix, water, egg, and oil in a large bowl.  Shape rounded teaspoonfuls of dough into balls and press a rolo candy in the middle and reshape into a ball.  Place 2 inches apart on ungreased baking sheet.  Bake at 350 for 8-10 minutes or until tops are cracked.  Cool for 2 minutes before removing from sheet.

*I'm not a big Devil Food's Cake fan, so I make this recipe with regular chocolate cake mix!

  3. Ah! Thanks for the recipe. There is a book out w/ (lazy) recipes using cake mix to make cookies. It is published by Rodale and is called The Ultimate Shortcut Cookie Book. I do not have this book yet but want it. Making cookies from cake mix is not only (lazy) easy, but inexpensive and great for bake sales.

    Here is another recipe:
    Chocolate cake mix
    1 stick butter or marg.
    2 eggs
    1 cup choc. bits
    350 degrees, 8 to 10 minutes

    So many possibilties exist!!
