What's for dinner tonight? Hmm?
Cause if what you're having sounds better than what I'm having, I may come over. And bring my whole family.
Or if you're like me and have NO CLUE what you're making for dinner tonight, you might want to give this new lazy recipe a try!
Lazy mom Sara sent it in to me and said, "I'm so lazy I make enough to have leftovers on a night I don't feel like cooking!"
We hear you Sara, we hear you.
And we understand.
Completely.
Lazy Enchilada Casserole
Makes 12 servings
2 lbs hamburger meat
1 14 oz. can enchilada sauce
2 cans chopped black olives (or whatever you like instead)
1 lb. shredded cheddar or mexican cheese
24 corn tortillas
Brown hamburger meat and drain. Mix in 1/4 cup enchilada sauce.
Place 6 corn tortillas side by side in the bottom of a 9x13 baking dish (they will overlap). Spread 1/4 of remaining enchilada sauce over tortillas and spoon 1/3 of hamburger meat over sauce.
Next, spread 1/4 lb. cheese and 1/4 can of olives on top of meat. Repeat layers of tortillas, sauce, meat, cheese and olives 2x.
Place 6 remaining tortillas on top of the 3rd layer, covering them with the rest of the sauce, cheese and olives.
Bake at 350 degrees for 30 minutes until heated through and cheese is melted.
Sour cream, guacamole, lettuce and tomatoes make great toppings!

ReplyDeleteI do this with a flour tort, and the family loves it, I like corn torts better so I will be making this, this week since school starts on Wed..
ReplyDeleteI make this quite often, except I use flour tortillas (personal preference) and I spread them with refried beans before adding the meat, etc.

ReplyDeleteWhat is enchilada sauce? I have never heard of it! I have made a version of this with cream of chicken soup mixed with sour cream as the sauce.

This I love. I have been a lazy mom for almost 34 years. Guess now I am a lazy Grandma.
ReplyDeleteWe made a few changes--I used flour tortillas, and we didn't have enough ground meat so we mixed refried beans with the meat. I used green enchilada sauce because my daughter doesn't like red things. Of course, she saw the green stuff and said "Yuck!" She hasn't tried it yet!
