Lazy Mom Christmas Cookie Week: Toffee

The second of my last installment of lazy Christmas treats (out of three today) was sent in to me by someone special.

But instead of me introducing her to you, I'll just let her introduce herself....

I am the God Mother of the God Father of BNNS Radio. You know, the internet radio station that carries the Lazy Mom Show on www.bnnsradio.com every Friday at 2 pm (ET). Not that I have an advantage of getting this posted just because I tell the God Father when he messes up. But I do like the show, (maybe that will help)..TEE HEE.....anyway I hope you enjoy this treat Stacey, I know your kids will.
Yes, the God Mother of BNNS Radio sent in this quick lazy Christmas treat for us to enjoy!  We lovingly refer to Bill, her husband and station manager, as the God Father of BNNS Radio, so I was happy to see this recipe from the God Mother herself!

In A Flash Toffee

35 Saltines
1 c. butter (cut up)
1 1/2 c. semi-sweet chocolate chips
1 c. chopped pecans
1 c. packed brown sugar


Line a cookie sheet that has sides (or a jelly roll pan) with foil. Arrange saltines in a single layer to cover foil.

In a microwave safe bowl, combine butter and brown sugar. Microwave 2-3 minutes, until butter melts. Stir 1-2 minutes; mix well. Spread evenly over crackers.

Bake at 375 degrees for 10 min. Remove from oven and sprinkle chocolate over crackers. Let stand 2 minutes. Spread chocolate evenly over top. Sprinkle with pecans and gently press into crackers.

Cool 20 minutes. Chill in refrigerator 1 hour. Break into pieces. Store in refrigerator or freezer.


Oh boy, I love me some toffee at Christmas time!  Especially LAZY toffee!  Thanks for sending this in God Mother!
