Lazy Pumpkin Chocolate Chip Muffins

Yesterday a beauty of an email landed in my inbox.  It was from lazy mom Renee and involved pumpkin, chocolate and muffins.

I love emails that involve pumpkin, chocolate and muffins, don't you?

Renee stumbled upon this lazy recipe on the website Our Best Bites and she got their permission to send it on over to me.

If you've never been to Our Best Bites before, BEWARE!  You'll get sucked in in no time!!  I may have took a gander at these bad boys and drooled all over my keyboard.

But alas, it sadly had more than five ingredients. So unless someone makes it FOR me (hint, hint) I will be abstaining.

That, and I'm kind of allergic to pecans.  So if you DO make them for me, just use walnuts, mkay?

Now! Let's get on with the pumpkin, chocolate and muffins, shall we?

Lazy Pumpkin Chocolate Chip Muffins

2 spice cake mixes (Best Bites prefers Duncan Hines)
1 30-oz. can pumpkin
1 12-oz. bag of semi-sweet chocolate chips


Preheat oven to 350. Combine cake mixes and pumpkin. Add in chocolate chips.

Spoon mixture into lined muffin tins. This can make as many as 48 muffins or as few as 36, depending on how full the tins are filled. These really don’t rise very much, so you can fill the tins pretty full.


If aesthetics are a concern, keep in mind that how they look going into the oven is very much what they will look like coming out of the oven. So a cookie scoop works great to keep things on the prettier side.

Bake for 22-25 minutes or until a toothpick inserted in the middle of one of the muffins comes out clean.

  1. I love these muffins...I had used a yellow cake mix, but sending the hubby after a spice mix as we speak! Can't wait to have them tonight!

  2. did you know that a box of gluten free spice cake is about $7 a box???? I know that because my neighbor makes these as cookies. they smell amazing and I can't have them. and I can't make myself pay that much for a spice cake. lol
