Jamaican Jerk Chicken with Sweet Potatoes {A Lazy Mom Recipe}

I don't know about you, but I've got a hankering for a Lazy Mom Recipe today. I stumbled across a good looking one on Good Housekeeping that sounds delish AND it's only 475 calories!  SCORE!  I did tweak it just a bit to make it a bit more lazy mom friendly for you.

Jamaican Jerk Chicken with Sweet Potatoes
serves 4

1 1/2 pounds sweet potatoes, cut into 1-inch chunks
Salt and pepper
4 teaspoons olive oil
4 chicken breasts
1 tablespoon jerk seasoning

Preheat oven to 450°F. Line a baking pan with nonstick aluminum foil. In large bowl, toss chicken pieces with jerk seasoning, 1/4 teaspoon salt, and remaining 2 teaspoons oil until coated. Arrange chicken in pan and roast 25 minutes or until juices run clear when thickest part of chicken is pierced with tip of knife.

Meanwhile, in large bowl, toss sweet potatoes with 1/4 teaspoon salt, 1/8 teaspoon freshly ground black pepper, and 2 teaspoons oil until coated. Arrange potato chunks in another baking pan and stick it in the oven as well to roast for 20 minutes.
