My dear lazy people.
Pumpkin season is fast approaching (in case you haven't noticed). So I would be remiss, people, just remiss, if'n I didn't share this delightful pumpkin dessert recipe that landed in my inbox recently with all of you.
This recipe was sent in by Cheri, who had this to say about it....
Your apple crisp recipe reminded me of this. I got it from a church lady and have made it a lot of times, so it must be easy (and good).And I would have to agree with her, wouldn't you? Church recipes just seem to be the best!

I'm thinking church recipes are good because Jesus himself said that man can't live by bread alone, so he must bless church recipes and declare them anointed.
So here's the recipe!
Pumpkin Cobbler
30oz can Easy Pumpkin Pie Mix (with the spices and sugar already in it)
12oz can Evaporated Milk (or add a bunch of dry milk to a measuring cup and pour milk over it!)
4 eggs
1/2 bag yellow cake mix
1 stick butter
Mix the first three ingredients together and pour into a 13x9 cake pan. With the next two ingredients you can either melt the butter and sprinkle dry mix over pumpkin first and then pour melted butter over it all. Or, Cheri likes to cut in cold butter, like you do for biscuits, in a bowl then sprinkle the crumbs over the pumpkin mixture. It takes a minute or so and you have to wash your hands, but the crumble topping always works out perfectly, she says.
Bake 1 hour at 350ĀŗF.

My dad makes this especially for me every year, he calls it pilgrim pumpkin pie. He adds crushed nuts and of course tops it with a touch of whipped cream. It is so delightful and it is something I look forward to every year.
ReplyDeleteI was going to say you forgot the chopped nuts on half for those who like nuts and the other half bare for the others. Whipped cream good too. This is a standard at Thanksgiving at our hours.

ReplyDeleteWe make several versions of this, my personal favorite for fall being apple dump cake.
Original version:
1 Large can apple pie filling (or if feeling especially ambitious make it!)
1 box yellow cake mix
1 stick butter
Layer pie filling, cake mix and butter in 9x13 pan and bake at 350 for about an hour.
My version:
Add cinnamon, nutmeg and clove to pie filling to taste. (I like it a little spicier.)
Use a spice cake mix
Sprinkle 1/2 cup apple cider on top before baking.
