Christmas morning Lazy Dad made us a very easy frittata. It was right at five ingredients, so of course we HAD to share it with all of you!
Let’s just consider it a little belated Christmas gift from us to all of you!

4 potatoes, cubed with skin on
1/2 cup onions
8 strips of bacon (or sub with any type of breakfast meat you prefer)
8 eggs, beaten
3/4 cup shredded cheese
Preheat oven to 350º
In a large pot bring water to a boil. Add potatoes and cook until tender. Drain and set aside to cool.
While waiting on the water and potatoes to boil, cook bacon strips in an oven-safe skillet (we used our Lodge Cast Iron one). Then set them aside as well.
In the same skillet, add oil and over medium heat sauté the onions until soft. Once soft, stir in eggs, drained potatoes, and bacon. Cook until eggs are firm on the bottom (about five minutes). Top with cheese and place in the oven until cheese is melted and eggs are firm (about 10 minutes).
Let it sit for a few minutes before serving then cut into pie shape slices. Salt and pepper to taste.
