2. How many of you need a healthy & low cost breakfast option for your family?
3. How many of you would LOVE to sleep in a few extra minutes in the morning?
I know I answered YES to all three of these questions and
needed A Lazy Mom solution!!
My mom is a firm believer and an amazing example on making food ahead of time and saving time and money in the kitchen! She taught me years ago to always make extra taco meat and keep refried beans in the cupboard to turn those “taco” leftovers into Amazing frozen dinner burritos. My husband knows when I’m not home and he’s hungry there is always a couple burritos in the freezer just waiting to be warmed up for a quick “homemade” meal!
So what does leftover taco/dinner burritos have to do with “Sleep-in Breakfast Burritos??”
After some major sampling, following similar directions for dinner burritos and perfecting the process I have come up with making 24-30 breakfast burritos in 1-2 hours that you store in the freezer.
In case you are still confused. Let me say this a different way…. I buy my ingredients, set aside a couple hours once a month or so and then the magic happens – more Zzzzzzz’s in the morning for this Lazy Mom Chef!!
