Doesn’t that title sound all non-lazy like? But it really IS lazy, and a delicious Lazy Mom Recipe straight out of Robin Miller’s cookbook, Robin Takes 5.

Chicken Cordon Bleu
4 boneless, skinless chicken breast halves (about 5 ounces each)
8 ounces deli-sliced smoked ham
4 (1-ounce) slices Swiss cheese
4 tablespoons Dijon mustard with horseradish (we just used regular Dijon mustard)
Preheat oven to 375ºF. Coat a shallow roasting pan with cooking spray.
Place the chicken in a large freezer bag or between 2 pieces of plastic wrap and pound to a 1/2-inch thickness. Top each chicken breast with the ham and Swiss cheese. Starting from the shorter end, roll up each piece of chicken and secure with wooden picks. Transfer the chicken to the prepared pan and season the top with salt and pepper. Spread the mustard all over each chicken roll. Bake for 30 to 35 minutes, until the chicken is cooked through.
For one serving of chicken, it’s only 338 calories, but it’s so delicious it feels like you’re cheating and eating something super bad for you!
To go with this yummy chicken, we also made one of Robin’s side dishes.
Swiss-Wrapped Asparagus Spears
16 asparagus spears, ends trimmed
4 teaspoons honey mustard
8 slices Swiss cheese
Preheat the boiler. Coat a baking sheet with cooking spray.
Immerse the asparagus spears in a large pot of boiling water and boil for 5 minutes, until crisp-tender. Drain and pat dry with a paper towel. Brush the honey mustard all over the asparagus. Wrap each slice of Swiss cheese around 2 asparagus spears, making 8 bundles. Transfer the bundles to the prepared baking sheet and broil for 1 to 2 minutes, until the cheese is golden. Season to taste with salt and pepper if desired.
Each serving, which is 2 bundles of asparagus spears, is just 82 calories!
So this whole delicious dinner is only 420 calories! And seriously feels like you’re eating way more and leaves you very satisfied!
Now, if you aren’t a big mustard fan, you can totally omit the mustard in both of these dishes and it would still be fabulous!
