What’s for dinner tonight? Hmm?

Lazy mom Sara sent it in to me and said, “I’m so lazy I make enough to have leftovers on a night I don’t feel like cooking!”
We hear you Sara, we hear you.
And we understand.
Lazy Enchilada Casserole
Makes 12 servings
2 lbs hamburger meat
1 14 oz. can enchilada sauce
2 cans chopped black olives (or whatever you like instead)
1 lb. shredded cheddar or mexican cheese
24 corn tortillas
Brown hamburger meat and drain. Mix in 1/4 cup enchilada sauce.
Place 6 corn tortillas side by side in the bottom of a 9×13 baking dish (they will overlap). Spread 1/4 of remaining enchilada sauce over tortillas and spoon 1/3 of hamburger meat over sauce.
Next, spread 1/4 lb. cheese and 1/4 can of olives on top of meat. Repeat layers of tortillas, sauce, meat, cheese and olives 2x.
Place 6 remaining tortillas on top of the 3rd layer, covering them with the rest of the sauce, cheese and olives.
Bake at 350 degrees for 30 minutes until heated through and cheese is melted.
Sour cream, guacamole, lettuce and tomatoes make great toppings!
