Christmas morning Lazy Dad made the most delicious little melt-in-your-mouth cinnamon rolls. (Yes, I’m just getting around to telling you about them.)
They are slightly crispy, bite-sized, and YUMMY. You simply must make them, even if it isn’t Christmas, mkay?
Mini Christmas Cinnamon Rolls
makes: about 9 mini cinnamon rolls
1 can crescent roll dough
Pop the can of crescent rolls and carefully roll them out to form a large rectangle. You will not be using them as crescent triangles, so make sure the perforated lines are all rolled together and it forms one large rectangle of dough.
Melt 2 tablespoons of butter and brush it on to the dough. Then sprinkle with brown sugar and cinnamon until the dough is coated to your liking. Roll from the shorter end of the rectangle into a log.
Cut into about one inch thick pieces and put one each in a greased cupcake pan.
Bake at 350˚ for 12-14 minutes.
For the icing: Melt 1 tablespoon of butter and whisk in 1 cup powdered sugar and 2-3 tablespoons of milk. If the icing is too thick add more milk. Pour over cinnamon rolls while they are hot.
