Mm, mm. This is shaping up to be a delicious week here on I’m a Lazy Mom! Two lazy Christmas treats posted yesterday, and a cookie recipe coming atcha’ today!

Candy Cane Cookies
1 pouch (17.5 oz) Betty Crocker® sugar cookie mix
1/3 cup butter, softened
3/4 teaspoon of peppermint extract (optional)
red food coloring
Heat oven to 375°F. In large bowl, stir cookie mix, butter and egg until dough forms (it takes a little bit, but it does come together, promise! You may have to finish off the mixing with your hands).
Divide dough in half. Mix in peppermint extract into 1 half of the dough. Then gradually add food coloring into same dough until desired tint of red is achieved (this could be as little as 2-3 drops to 1/2 a teaspoon).
For each candy cane, form 6-inch long ropes (skinnier ropes work better) from each batch of dough. (If your dough gets too warm, it will be hard to work with, so you may need to refrigerate to cool it back down.) Twist 1 red and 1 white rope and press together lightly. Curve top of cookie down to form handle of cane. (Your kids would love to help with this part! Remember, they don’t have to be perfect – we’re lazy moms!)
Place cookies 2 inches apart on an ungreased baking sheet. Bake 8 to 10 minutes or until set. Cool 1 minute; remove from cookie sheet to wire rack to cool completely.
