It’s that age old question… what do I do with Thanksgiving leftovers? So of course, A Lazy Mom Thanksgiving would not be complete without a lazy leftover recipe!!

This lazy leftover recipe was sent in by Cyndi who actually used this recipe one Thanksgiving when she was in a pinch, but it is such a great leftover recipe that I have dubbed it as such here on this little ol’ lazy blog! Here’s what she had to say about the recipe…
Last year, I had foot surgery a week before Thanksgiving. When my two adult children and families came for dinner, I used this recipe as the base for my dinner. I simply added some stir-fried green beans, a congealed salad, hot bread, and a bought pumpkin pie. This recipe originated from Stove Top Stuffing, and I use it on a regular basis.
Thanksgiving Leftovers Pot Pie (aka: Stuffing “Pot Pie”)
1 pkg. chicken flavor stuffing mix (or leftovers!!)
1 can cream of chicken soup, undiluted
1/3 cup sour cream
1 16-ounce pkg. frozen mixed vegetables, thawed (or leftovers!!)
3-4 chicken breasts, thawed and cut in 1-inch pieces (or turkey leftovers!!)
Preheat oven to 400 degrees.
Prepare stuffing mix according to directions; set aside. (skip this step if using leftovers!!)
Combine soup and sour cream. Add vegetables and chicken (or turkey leftovers!!); before mixing in, sprinkle with salt and pepper. Stir vegetables and chicken (or turkey) into sauce mixture.
Pour mixture into a 13 X 9-inch baking dish. Top with stuffing. Bake for 30-40 minutes, until chicken is cooked through and mixture is “bubbly” hot. (If using this recipe for leftovers, simply cook until bubbly hot!)
Yield: 5-6 servings
How great is this for not only a Lazy Thanksgiving Recipe, but also a Lazy Leftover Thanksgiving recipe?!
